OK so I really had to play around with this one and finally got it, think I will wait a while until I try to come up with my own concoction, but they tasted great !
1 c butter
1 1/4 c brown sugar
3/4 white sugar
1 tbsp honey
2 tsp vanilla extract
2 eggs
1 1/2 c all purpose flour
1/4 tsp baking soda
1 tsp baking power
3/8 tsp salt
4 c rolled oats
1/2 c macadamia nuts
1 1/2 c strawberries , hulled and cup up
1/2 c dried apricots
Preheat oven to 350
cream together butter, sugar and honey then add vanilla and eggs blend well
Fold in dry ingredients including oat meal when just about blended fold in nuts, apricots and strawberries
drop by heaping spoon fulls on greased cookie sheet about 2 in apart
Bake 9 -12 min until cookies are set, middles are dry looking and edges begin to brown
