Ritz Pizzas's

My little Sister made these at school in like 3rd grade, she came home with the recipe and we made some. I have always like them. They are a fun snack that can cure a pizza craving!

 place crackers baking sheet (whole wheat work too)
 top with sauce and cheese
ad what ever toppings you want
bake at 350 for 8 minutes

Baking today...



Today I made some Peanut Butter Chocolate Chip cookies and Banana Oatmeal Chocolate Chip which I didn't realize I had already blogged.  Looking back at the blog post I bet I know why they didn't stick out in my mind in the picture of the ingredients I have baking powder and the recipe calls for baking soda....oops. But they both turned out good today!

Emeril's Flourless Peanut Butter Chocolate Chip Cookies

1 c. creamy peanut butter
1/2 c. sugar
1/2 c. light brown sugar
1/2 semisweet chocolate chips
1 lg egg, beaten
1 tsp. vanilla extract

Preheat oven to 350.

Combine all ingredients in a bowl, and stir until smooth. Divide dough into 24 portions, about 1 tbsp. each. Roll each one into a ball. Place on ungreased cookie sheet, leaving one inch of space between each. Press down with a fork in a crosshatched pattern. (I used a very small ice cream scoop and just drop them on the cookie sheet the crosshatched them) Bake cookies until they are risen and lightly golden brown(8-10 minutes) Let cool before removing from cookie sheet.

Grandma VanDoren's White bread

3 c. warm water (110 degrees)
3 tbsp active yeast
2 tsp salt
4 tbsp vegetable oil
1/2 c. white sugar
8 c. bread flour
(makes two loafs)


In a large bowl, combine warm water, yeast, salt, oil, sugar, and 4 cups flour. Mix thoroughly, and let sponge rise until doubled in size.


Gradually add about 4 cups flour, kneading until smooth. Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.


Punch down the dough, let it rest a few minutes. Divide dough into two equal parts. Shape into loaves, and place in two 8 1/2 x 4 1/2 inch oiled bread pans. 


Bake at 350  for 30 minutes. Cover with foil (to prevent excess browning) and bake for 10 minutes 






NOTE:  just looked at this recipe again on allrecipes.com and I  guess you are suppose to let the dough rise  after putting it into bread pans. which would make this a 3 loaf recipe!! 


But we have enjoyed it as I listed it prepared above!

Sub / Sandwich Rolls

3/4 c warm water
4 tbsp sugar
2 tbsp dry yeast
1/4 c crisco, or butter  melted (I used butter)
1 c full fat milk
1 1/2 tsp salt
51/2 c all purpose flour

In small bowl proof yeast in 3/4 c warm water(110 degree)


In a large bowl mix 5 c flour w/ melted crisco or butter.


In a small bowl mix 1c milk with sugar and salt. Warm in microwave ( I do mine for 1 minute)  stirring to dissolve sugar and salt. Pour into flour and butter mixture. Add proofed yeast and knead dough until smooth (add more flour if needed).


Place dough on lightly floured board to rest for 5 -10 minutes.


Place in oiled bowl covered with a towel to rise 50-60 minutes.

Punch down dough and cut into pieces and shape into desired shape.  ( I made rolls and hot dog buns) Place shaped dough on oiled cookie sheet cover and let rise for 25 minutes or until doubled

Preheat oven to 375,  bake for 22-25 minutes or until golden brown.


Note: i tried this as a loaf of bread and it just wasn't that good... as rolls I really liked it!!
