Best Apple Pie Muffins Ever

Topping
1/2 c firmly  packed brown sugar
1/3 c all purpose flour
1/4 c  unsalted butter
1 tsp cinnamon

Toss all ingredients together and set aside















Muffins
1 1/2 c firmly packed brown sugar
2/3 c vegetable oil (i used olive oil)
1 egg
1 1/2 tsp vanilla
2 1/2 c all purpose flour
1 tsp baking soda
1/4 tsp salt
1 c buttermilk (I used a substitute 1 tbsp vinegar
 then add enough milk to make a cup let stand 5 minutes)
2 c diced apples
1 tsp cinnamon optional

In a large bowl whisk together brown sugar, oil, egg and vanilla until smooth

In a separate bowl sift together flour soda, and salt

Stir flour mixture into oil alternating with the buttermilk

fold in apples mixing just until combined

put into muffin pans and sprinkle with topping

Bake at 350 25-30 minutes or until golden brown and top springs back when touched
